Match food and seasonal wine
For several months now, Tatiana, fifth generation at Château du Taillan, has been presenting her best food and wine pairings.

This Tuesday, 21st October, a recipe that smells like autumn: roasted butternut squash with honey, walnuts and bacon served with the irresistible and exceptional Château du Taillan 2022: a first for this much-talked-about vintage.


Why does this pairing work so well?
The sweetness of the butternut squash brings out the roundness of the Château du Taillan 2022, while the richness of the cream and olive oil balances the tannins and freshness of the vintage. The fruitiness of the wine is even more vibrant, the structure more mellow, and the balance with the dish is perfect.
Ingredients:
- One butternut squash
- Olive oil, salt, pepper
- Crème fraîche
- Walnuts
- Goat cheese
- Honey
- Bacon bits
Preparation:
Preheat your oven to 200 degrees.
Start by cutting the butternut squash in half and scoring it for easier cooking.
For the topping, fry a few slices of bacon in a pan, then prepare some slices of goat’s cheese and walnuts.
Once all the ingredients are ready, assemble the dish: start with a layer of cream and a drizzle of olive oil to bring out the flavours of the wine.
Next, add the fried bacon, goat’s cheese and walnuts, a pinch of salt and pepper, then the honey to add an extra touch of sweetness.
And there you have it, a dish in the colours of autumn. All that’s left to do is bake it at 200°C for 40 minutes.
